  • 2 medium zucchini
  • 1 tsp dried oregano
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1 cup marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 190C (375F) and lightly grease a baking dish.
  2. Slice zucchini lengthwise and arrange them in a single layer at the bottom of the dish. Sprinkle with dried oregano.
  3. Spread half the ricotta over the zucchini, then top with half of the marinara sauce. Repeat this layering process.
  4. Finish by sprinkling shredded mozzarella over the top layer.
  5. Cover with aluminum foil and bake for 25-30 minutes. Remove foil and bake for an additional 10-15 minutes until golden and bubbly.
  6. Allow to cool slightly before serving, garnished with fresh basil.
