  • 1 packet taco seasoning
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn kernels (15 oz), drained
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1 can condensed cream of mushroom soup (10.5 oz)
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend
  • 1 large bag Nacho Cheese Doritos (9.25 oz), lightly crushed

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a frying pan over medium heat, brown the ground beef with diced onion and minced garlic until no longer pink; drain excess fat.
  3. Stir in taco seasoning, black beans, corn, and diced tomatoes; simmer for 2-3 minutes.
  4. In a mixing bowl, combine cream of mushroom soup and sour cream until smooth.
  5. Layer half of the meat mixture in the baking dish, followed by half the cream mixture, one cup of shredded cheese, and half of the crushed Doritos.
  6. Repeat layers with remaining ingredients.
  7. Cover with foil and bake for 15 minutes; remove foil and bake uncovered for another 10 minutes until bubbly.
