  • 1¼ cups whole milk
  • 1½ cups fresh or frozen raspberries

  • 2 tbsp lemon juice
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup melted white chocolate
  • 2–3 tbsp milk

Instructions

  1. Preheat the oven to 350°F. Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and melted white chocolate.
  4. Gradually add the dry ingredients alternately with whole milk until just combined.
  5. Divide batter among prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  6. For raspberry filling, cook raspberries with sugar and lemon juice in a saucepan until they break down; stir in cornstarch slurry until thickened.
  7. For frosting, beat softened butter until creamy, then gradually add powdered sugar while mixing. Stir in melted white chocolate and desired amount of milk for consistency.
  8. Level cooled cake layers if necessary, assemble with raspberry filling between layers, frost top and sides, then decorate as desired.
