  • 1 large egg
  • 1 teaspoon vanilla extract
  • 218g (1 ¾ cups) all-purpose flour
  • 2 ½ teaspoons instant espresso powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 170g (1 cup) white chocolate chips

Instructions

  1. Brown the butter in a medium saucepan over medium heat until caramelized and nutty. Allow it to cool in a bowl for 8-10 minutes.
  2. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  3. In a small bowl, whisk together flour, espresso powder, cinnamon, salt, baking powder, and baking soda.
  4. Combine the cooled butter with brown sugar, granulated sugar, vanilla extract, and egg until fully mixed.
  5. Gradually mix the dry ingredients into the wet mixture until a rough dough forms.
  6. Fold in white chocolate chips evenly throughout the dough.
  7. Roll tablespoon-sized portions of dough into balls and place them on the prepared baking sheet with spacing.
  8. Bake for 9-11 minutes until puffed and golden around the edges; they will set as they cool.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
