Ingredients

  • Oil or water for oil-free cooking
  • Vegan beef or portobello mushrooms
  • Onion
  • Carrots
  • Celery
  • Garlic
  • All-purpose flour or cornstarch
  • Rutabaga or turnips
  • Potatoes
  • Cabbage
  • Vegetable stock
  • Soy sauce or Tamari
  • Seasonings (salt, pepper, sugar, bay leaves, thyme, rosemary)

Instructions

  1. Heat oil in a large Dutch oven over high heat.
  2. Sear vegan beef or mushrooms until golden; set aside.
  3. Lower heat to medium; sweat onions, carrots, and celery until softened.
  4. Add garlic and sauté briefly before mixing in flour.
  5. Gradually pour in vegetable stock while stirring; mix well.
  6. Add rutabaga, potatoes, cabbage, soy sauce, salt, pepper, sugar, and herbs; stir thoroughly.
  7. Bring to a boil; reduce heat and simmer uncovered for 45-50 minutes until potatoes are tender.
  8. Return seared ingredients to the pot 10 minutes before serving.
