  • 75 g dark vegan chocolate
  • 3 cups all-purpose flour
  • 2 2/3 cups granulated sugar
  • 1 1/2 cups unsweetened cocoa powder
  • 1 1/2 cups plant-based milk
  • 3/4 cup neutral oil (e.g., canola)
  • 1 cup vegan butter
  • 80 g dark vegan chocolate for ganache

Instructions

  1. Preheat oven to 350°F (175°C). Prepare baking pans.
  2. Melt dark chocolate in hot coffee. In a separate bowl, mix dry ingredients.
  3. Combine wet ingredients, then mix everything until just combined.
  4. Pour batter into prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  5. Cool layers before frosting with chocolate buttercream made from melted chocolate and vegan butter.
  6. Prepare ganache by melting coconut milk and dark chocolate together; drizzle over the frosted cake.
