  • 8 oz mascarpone cheese
  • 2 tablespoons strong brewed coffee
  • 1/3 cup powdered sugar
  • 10 oz white chocolate (for coating)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. Pulse ladyfingers in a food processor until finely crushed and transfer to a mixing bowl.
  2. In another bowl, combine mascarpone cheese, powdered sugar, coffee, and vanilla extract until smooth.
  3. Fold crushed ladyfingers into the mascarpone mixture until combined and chill for 15–20 minutes.
  4. Roll chilled mixture into 1-inch balls and place on a parchment-lined tray.
  5. Refrigerate truffles for about 30 minutes to firm up.
  6. Melt white chocolate and dip each truffle until fully coated; allow excess to drip off.
  7. Dust with cocoa powder while still tacky and chill again until set.
