  • 4 sprigs fresh thyme
  • 1 handful almonds (roughly chopped)
  • 8 garlic cloves (thinly sliced)
  • 3 ounces feta cheese (crumbled)
  • 1/3 cup fresh parsley (chopped)

Instructions

  1. In a small saucepan, heat 1/2 cup of olive oil over medium heat. Add garlic and cook until golden brown for about 2-3 minutes. Remove from heat and add thyme sprigs; let cool.
  2. In a food processor, combine remaining olive oil, almonds, feta cheese, parsley, and optional spices. Pour in the garlic-infused oil (discard thyme) and blend until smooth.
  3. Transfer to a serving bowl, drizzle additional olive oil if desired, garnish with herbs or nuts, and serve with fresh bread.
