  • 1 salmon fillet (~5 oz)
  • 2 tbsp teriyaki sauce
  • 1 cup cooked jasmine or sushi rice
  • 1 avocado, sliced
  • 1 small cucumber, thinly sliced
  • 1 tsp rice vinegar or lemon juice
  • Salt & pepper to taste
  • Optional: 1 tsp sesame oil

Instructions

  1. Preheat your oven to 400°F (200°C). Cook the salmon by pan-searing or baking for 10-12 minutes. Brush with teriyaki sauce during the last 2 minutes to allow for caramelization.
  2. In a mixing bowl, toss sliced cucumber with rice vinegar, salt, pepper, and sesame oil (if desired). Chill slightly.
