1 salmon fillet (~5 oz)
2 tbsp teriyaki sauce
1 cup cooked jasmine or sushi rice
1 avocado, sliced
1 small cucumber, thinly sliced
1 tsp rice vinegar or lemon juice
Salt & pepper to taste
Optional: 1 tsp sesame oil
Instructions
Preheat your oven to 400°F (200°C). Cook the salmon by pan-searing or baking for 10-12 minutes. Brush with teriyaki sauce during the last 2 minutes to allow for caramelization.
