  • 1 cup glutinous rice
  • 1 cup coconut milk
  • ½ cup sugar
  • ¼ teaspoon salt
  • 2 ripe mangoes
  • Rice papers

Instructions

  1. Soak glutinous rice in water for at least 4 hours or overnight.
  2. Drain the rice and steam it in a cheesecloth-lined steamer over boiling water for 25-30 minutes until tender.
  3. In a saucepan, heat coconut milk, sugar, and salt over medium heat until sugar dissolves. Reserve some sauce for drizzling later.
  4. Mix the cooked rice with the remaining coconut sauce and allow it to absorb flavors for 10-15 minutes.
  5. Peel and slice mangoes into strips.
  6. Soften rice papers by dipping them in warm water for about 10-15 seconds, then lay flat on a damp towel.
  7. Spread sticky rice on each rice paper, add mango slices, fold sides over and roll tightly like a spring roll.
  8. Chill rolls seam side down in the fridge for about 30 minutes before serving.
