  • 1½ teaspoons ground coriander (or cumin)
  • 1 teaspoon turmeric
  • 1 cup rice
  • 1 can (15 ounces) lentils
  • 1 can (15 ounces) diced tomatoes
  • 2 cups vegetable broth
  • ¼ teaspoon red pepper flakes (or more to taste)
  • 1 teaspoon salt

  • ½ cup Italian parsley (chopped)
  • 4 wedges lemon

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onion until softened.
  2. Stir in rice, garlic, spices; sauté for another minute.
  3. Add vegetable broth, lentils, and tomatoes; season with salt and pepper. Simmer for about 10 minutes.
  4. Preheat oven to 350°F (180°C). Cut bell peppers in half and remove seeds.
  5. Fill each half with the rice-lentil mixture; place in a baking dish.
  6. Bake for about 40 minutes until tender.
