  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1½ cups whole milk

  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped
  • 1 cup shredded Monterey Jack cheese
  • 2 cups broth or water
  • Salt, as needed
  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 1 tsp garlic powder
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Prepare the steak by patting it dry and seasoning it with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  2. Sear the steak in a hot skillet for 4–5 minutes per side until cooked to your liking. Let it rest before slicing.
  3. Rinse the rice under cold water, then heat olive oil in a pot and toast the rice with garlic powder before adding broth or water to cook.
  4. For the queso sauce, melt butter in the same skillet, add chopped garlic, pour in milk, and bring to a simmer. Gradually stir in cheeses until smooth.
  5. Assemble by spooning rice onto plates, topping with sliced steak and warm queso sauce. Garnish with fresh cilantro, lime wedges, avocado slices, and jalapeños as desired.
