  • 4 medium tortillas (flour, whole wheat, or gluten-free)
  • 2 cups fresh spinach (chopped)
  • 1 cup feta cheese (crumbled)
  • 2 tablespoons olive oil or butter (for cooking)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1/4 cup black olives (sliced)
  • 1/2 cup cooked grilled chicken (diced)

Instructions

  1. Prepare the ingredients by washing and chopping the spinach, crumbling the feta cheese, and chopping the sun-dried tomatoes and olives.
  2. Heat a non-stick skillet over medium heat and add olive oil or butter.
  3. In a mixing bowl, combine spinach, feta cheese, sun-dried tomatoes, black olives, and diced chicken; mix well.
  4. Place one tortilla in the skillet, spread filling on half of it, then fold over.
