  • 8 mini or Persian cucumbers
  • 1 green onion (ends trimmed and finely sliced)
  • Sesame seeds
  • 1 ½ tbsp low-sodium soy sauce (tamari or coconut aminos if gluten-free)
  • 1 ½ tbsp rice vinegar or white apple vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves (minced)
  • 1 tsp crushed or full red chili flakes

Instructions

  1. Wash, dry, and cut the ends off the cucumbers. Place one cucumber between two chopsticks. Cut the cucumber at a 45° angle into thin diagonal slices on top—this technique prevents cutting all the way through. Flip the cucumber over and make cuts at a 90° angle. Do not cut straight across again; this will ruin the spiral effect! Once spiraled, cut the cucumbers in half and place them in a large mixing bowl. Alternatively, you can slice them thinly using a mandolin.
  2. In a small bowl, whisk together all dressing ingredients until well combined. Taste and adjust seasonings according to your preference.
  3. Pour the prepared dressing over the cucumbers. Mix gently to avoid breaking them apart. Garnish with sliced green onion and sprinkle sesame seeds on top. Enjoy your Spicy Cucumber Salad!
