  • 8 oz cream cheese, softened
  • 4 tbsp unsalted butter, softened
  • ½ tsp vanilla extract (for frosting)
  • ¼ tsp salt (for frosting)
  • 2 ½ cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat softened butter and sugar until creamy. Add pumpkin puree, egg, and vanilla; mix well.
  3. In another bowl, whisk together flour, baking powder, cinnamon, salt, ginger, and nutmeg.
  4. Gradually add dry ingredients to wet mixture until combined. Chill dough for 30 minutes.
  5. Roll dough into balls, coat in sugar and cinnamon mix, then place on parchment-lined baking sheets.
  6. Bake for 10-12 minutes until edges are slightly browned. Let cool completely.
