Ingredients

Scale
  • 1 cup lukewarm milk
  • 1/4 cup lukewarm water
  • 2 1/4 tsp instant yeast
  • 1/4 cup granulated sugar
  • 3 3/4 cup all-purpose flour
  • 4 tbsp unsalted butter (divided)
  • 1/8 cup unsweetened cocoa powder
  • 1/3 cup semi-sweet chocolate chips
  • 1 tbsp granulated sugar
  • 1/2 tsp plant-based vanilla extract
  • 1/4 cup graham cracker crumbs (finely crushed)
  • 2 large egg whites (room temperature)
  • 1/8 tsp cream of tartar
  • 1/8 tsp salt

Instructions

  1. In a mixing bowl, combine lukewarm milk, water, yeast, and sugar. Let it sit for about 5 minutes until bubbly.
  2. Gradually mix in melted butter, salt, and flour until a soft dough forms. Knead for about 5 minutes until smooth.
  3. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  4. While rising, prepare the filling by combining cocoa powder, cream, chocolate chips, sugar, butter, vanilla extract, and salt in a saucepan over low heat; stir until smooth.
  5. Roll out the dough into a rectangle on a floured surface. Spread the chocolate filling evenly and sprinkle crushed graham cracker crumbs on top.
  6. Roll tightly from one end to another and cut into equal pieces.
  7. Preheat oven to 375°F (190°C). Place rolls on a parchment-lined baking sheet and brush tops with melted butter. Bake for about 20–25 minutes or until golden brown.
  8. For the meringue topping: Beat egg whites with cream of tartar until soft peaks form; gradually add sugar while continuing to beat until stiff peaks form.
  9. Top baked rolls with meringue mixture while still warm and briefly toast using a kitchen torch or broiler.
