  • 2 pounds frozen corn kernels
  • 4 tablespoons butter
  • 1 cup heavy cream
  • 4 ounces cream cheese
  • 1 cup ricotta cheese
  • 1 tablespoon sugar
  • 1 tablespoon flour
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon EACH rosemary leaves, thyme leaves, paprika, onion powder, pepper
  • Dash of cayenne pepper (optional)
  • 46 strips turkey bacon, cooked and crumbled
  • green onions, chopped

Instructions

  1. Lightly spray your slow cooker with nonstick cooking spray.
  2. Set aside 1 cup of frozen corn. Add the remaining corn to the slow cooker.
  3. In a blender, combine the reserved corn with butter, heavy cream, cream cheese, ricotta cheese, sugar, flour, salt, garlic powder, rosemary leaves, thyme leaves, paprika, onion powder, pepper (and cayenne if using). Blend until smooth.
  4. Pour the blended mixture over the corn in the slow cooker and stir to combine.
  5. Cook on HIGH for 2–4 hours or LOW for 4–6 hours. Stir occasionally.
  6. Serve warm topped with crumbled turkey bacon and green onions.
