  • 3 pounds beef chuck roast (sliced thin)
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 30 ounces canned light and dark red kidney beans (drained and rinsed)
  • 8 ounces canned tomato sauce
  • 15 ounces canned fire-roasted diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. In a large dutch oven, heat olive oil over medium-high heat. Add sliced beef and diced onion; cook until browned.
  2. Stir in minced garlic and sauté for about one minute.
  3. Drain excess fat and return the mixture to the pot. Add kidney beans, tomato sauce, fire-roasted tomatoes, beef broth, chili powder, cumin, salt, and black pepper; stir well.
  4. Transfer mixture to a slow cooker and cover tightly. Cook on low for 4–6 hours until beef is tender.
