  3. Slice the turkey turkey turkey pepperoni into small pieces (about 3/4 inch) and some into thin strips (1/4 to 1/2 inch).
  4. Cut the red bell pepper into small wedge-shaped pieces for decoration.
  5. Assemble each skewer starting with a piece of red bell pepper, followed by a chunk of turkey pepperoni, a mozzarella ball with an olive 'eye,' then another thicker slice of turkey pepperoni. Finish by adding several thin slices of turkey pepperoni and another mozzarella ball at the base.
  6. Chill in the refrigerator before serving on a themed platter.
