  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 oz cream cheese, softened
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp chopped parsley or chives (optional)

Instructions

  1. Cook penne in salted boiling water until al dente; drain and set aside.
  2. Season chicken with Cajun seasoning and other spices; toss to coat.
  3. Heat olive oil and butter in a skillet; sear chicken until golden brown on both sides. Remove from skillet.
  4. In the same skillet, melt remaining butter and sauté garlic. Add cream and broth; let simmer.
  5. Stir in cream cheese until smooth, then add all cheeses until melted.
  6. Combine cooked penne with sauce; toss to coat.
  7. Serve with seared chicken on top or alongside.
