Start your day with a delightful Savory Breakfast Plate featuring soft-boiled eggs, creamy tomato toast, and vibrant sautéed greens. This recipe is not only quick to prepare but also packed with nutrients to fuel your morning.

Ingredients

  • 2 slices whole grain or sourdough bread
  • 1 tbsp cream cheese or cashew spread
  • 2 slices fresh tomato
  • 2 soft-boiled eggs
  • 45g cremini mushrooms, sliced
  • 1 cup fresh spinach
  • 1 tsp olive oil or butter
  • Salt & freshly ground black pepper
  • Fresh parsley for garnish

Instructions

  1. Boil the Eggs: Bring water to a boil, gently lower in eggs, and boil for about 7 minutes. Transfer to an ice bath, cool, peel, and halve.
  2. Sauté the Veggies: Heat olive oil in a frying pan over medium heat. Sauté sliced mushrooms until golden brown; then add spinach and cook until wilted.
  3. Toast Assembly: Spread cream cheese on one slice of toast and top with tomato slices. Pile sautéed mushrooms on the other slice.
  4. Plate & Finish: Arrange toast on a plate with the soft-boiled eggs and wilted spinach. Season to taste and garnish with parsley.
