  • 2 medium potatoes, peeled & diced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 tsp olive oil or butter
  • 1 tbsp butter
  • 2 tbsp milk
  • Salt & pepper, to taste

Instructions

  1. Cook the Salmon: Season the salmon fillet with salt and pepper. Heat olive oil or butter in a skillet over medium heat. Pan-fry the salmon for 3-4 minutes on each side or until cooked through.
  2. Make the Mashed Potatoes: Boil peeled and diced potatoes in salted water for about 12-15 minutes until fork-tender. Drain well, then mash with butter and milk until smooth. Season with salt.
  3. Prepare the Vegetables: Steam sliced carrots for about 5-6 minutes and broccoli florets for approximately 4-5 minutes until tender yet vibrant.
  4. Assemble Your Dish: Plate the salmon next to a generous scoop of mashed potatoes, accompanied by steamed carrots and broccoli. Serve hot.
