  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme (or 1/3 tsp dried thyme)
  • 1/4 tsp nutmeg
  • 1/2 cup grated parmesan cheese (divided)
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic by cutting off the top, drizzling with olive oil, wrapping in foil, and baking for about 30 minutes until soft.
  3. Grease a 9×13-inch baking dish.
  4. Thinly slice the potatoes using a mandoline slicer.
  5. Layer the potato slices upright in the baking dish.
  6. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper until warmed but not boiling.
  7. Squeeze roasted garlic cloves into a bowl and mash them into a paste; stir into the cream mixture.
  8. Pour the creamy mixture over the layered potatoes and cover with foil.
  9. Bake covered for 40 minutes; then uncover and add remaining cheeses on top.
  10. Return to oven uncovered for another 30 minutes until cheese is bubbly and golden brown.
