  • 1 tablespoon maple syrup (optional)

  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175 degrees Celsius. Prepare a small springform pan by greasing and dusting it with flour.
  2. In a mixing bowl, beat the eggs and sugar until frothy.
  3. Add in the coconut oil, pumpkin puree, vanilla extract, and optional maple syrup; mix briefly until combined.
  4. In another bowl, whisk together the flour, baking powder, and pumpkin spice. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared pan and bake uncovered for 25 minutes. Cover with foil and bake for an additional 20 minutes or until a toothpick inserted comes out slightly moist.
  6. Allow the cake to cool completely before glazing with powdered sugar mixed with milk and maple syrup.
