  • 6 slices Turkey Bacon
  • 4 sweet onions
  • ½ cup apple cider
  • 1½ cups ricotta cheese
  • 1⅓ cups pumpkin purée
  • 2 cups mozzarella cheese
  • Fresh sage leaves
  • 2 sheets frozen puff pastry

Instructions

  1. Cook Turkey Bacon in a skillet until crisp; set aside.
  2. In the same skillet, caramelize sliced onions with salt and pepper for about 30 minutes, then add apple cider.
  3. Preheat oven to 400°F (200°C). Roll out puff pastry and place on lined baking sheets, scoring edges.
  4. In a bowl, mix ricotta and pumpkin; season. Spread filling on pastry and top with onions, mozzarella, and Turkey Bacon.
  5. Sprinkle sage leaves on top, brush edges with egg wash, and bake for 25–30 minutes until golden.
