  • 2 Tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 1/2 cups whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 3 Tbsp unsalted butter (melted, plus more for pan)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup confectioners’ sugar
  • 3 Tbsp maple syrup
  • 1 cup heavy cream

Instructions

  1. Combine all crepe ingredients in a blender and mix until smooth. Let rest for at least 30 minutes.
  2. Heat a nonstick skillet over medium heat, add butter, and pour about ¼ cup of batter to cook each crepe for about 1 to 1½ minutes per side until golden.
  3. In a mixing bowl, whip together softened cream cheese, confectioners’ sugar, maple syrup, and heavy cream until smooth.
  4. Spread the maple cream cheese filling onto each crepe, fold, and serve immediately.
