  • 6oz Warm Water
  • 50 Grams Granulated Sugar
  • 2 Tablespoons Browned Butter
  • 1 Large Egg
  • 1 Tablespoon Dry Milk Powder
  • 1 Teaspoon Salt
  • 5.3oz Pure Pumpkin Puree
  • 1 Tablespoon Pumpkin Pie Spice
  • 406 Grams – 468 Grams All-Purpose Flour
  • 150 Grams Brown Sugar
  • 1 1/2 Teaspoon Ground Cinnamon
  • 3oz Browned Butter for Frosting
  • 4oz Cream Cheese
  • 2oz Browned Butter for Frosting
  • 1 Tablespoon Pure Vanilla Extract
  • 2 Tablespoons Heavy Cream
  • 180 Grams Confectioners Sugar

Instructions

  1. Activate yeast by combining warm water and granulated sugar; let sit until frothy.
  2. In a stand mixer, mix the activated yeast with browned butter, egg, dry milk powder, salt, pumpkin puree, and pumpkin pie spice. Gradually add flour to form a soft dough.
  3. Knead the dough for 5–7 minutes, then let it rise in a greased bowl for about 1 hour until doubled in size.
  4. Prepare the filling by mixing brown sugar, cinnamon, and pumpkin pie spice.
  5. Roll out the dough to a rectangle and spread browned butter over it; sprinkle filling mixture evenly.
  6. Roll tightly from one edge and cut into 12 equal pieces. Place on a greased baking sheet lined with parchment paper.
  7. Allow rolls to rise again for 1 hour until puffy.
  8. Preheat oven to 350°F (175°C) and bake for 25–27 minutes until golden brown.
  9. For frosting: Mix softened cream cheese with browned butter and confectioners' sugar; add vanilla extract and heavy cream.
  10. Frost warm rolls generously before serving.
