  • 1 cup canned pumpkin puree
  • ½ cup melted butter (or vegetable oil)
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • For the Cinnamon Swirl: ¼ cup melted butter, ¼ cup brown sugar, 1 tsp ground cinnamon
  • For the Cream Cheese Glaze: ½ cup powdered sugar, ½ tsp vanilla extract, 2–3 Tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a mixing bowl, combine pumpkin puree, melted butter (or oil), granulated sugar, egg, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  4. Gently fold the dry ingredients into the wet mixture until just combined; it's okay if there are small lumps.
  5. Prepare the cinnamon swirl by mixing melted butter, brown sugar, and cinnamon in a small bowl.
  6. Fill muffin cups halfway with batter, add a spoonful of cinnamon swirl mixture on top, then add more batter to fill.
  7. Lightly swirl with a toothpick for an attractive finish.
  8. Bake for 20–25 minutes or until a toothpick comes out clean.
