  • 6 Persian cucumbers (or 2 English cucumbers)
  • 6 medium Roma tomatoes
  • 1 small red onion
  • 3 small Persian limes (or 1 large lemon)
  • 2 tbsp dried mint
  • Salt and pepper to taste
  • 3 tbsp olive oil

Instructions

  1. Peel and finely chop the red onion.
  2. Cut the cucumbers in half lengthwise, then chop into small pieces.
  3. Halve each Roma tomato and remove the seeds before finely chopping.
  4. In a bowl, squeeze the juice from the limes or lemon, adding salt, pepper, and dried mint.
  5. Combine the chopped cucumbers, tomatoes, and onion in a mixing bowl.
  6. Pour the lemon mixture over the salad and mix well to combine.
  7. Drizzle olive oil just before serving for added richness.
