  • 2 cups sugar
  • 1 cup vegetable or canola oil
  • Zest and juice of 1 large orange
  • 3 cups all-purpose flour
  • 1 tsp. salt
  • 1 tsp. cardamom (optional)
  • 1/4 tsp. baking soda
  • 2 cups grated zucchini
  • For the glaze: Zest and juice of 1 large orange, 3 tbsp melted butter, 3 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, whisk together the eggs and sugar until well combined. Add in oil, orange zest, and juice; mix thoroughly.
  3. In another bowl, sift together flour, salt, baking soda, and cardamom (if using). Gradually mix dry ingredients into wet until just combined.
  4. Fold in grated zucchini until evenly distributed.
  5. Pour batter into prepared pan and bake for about 70 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a cooling rack. For the glaze, combine melted butter with orange zest and juice; whisk in powdered sugar until smooth. Drizzle over cooled bread.
