  • 4 lamb shanks
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 6 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups dry apple vinegar
  • 2 cups beef or lamb stock
  • 2 bay leaves
  • 2 sprigs rosemary
  • 3 sprigs thyme

Instructions

  1. Season the lamb shanks with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and sear the shanks until browned on all sides. Remove from pot.
  2. Sauté diced onion, carrots, celery, and minced garlic in the same pot until softened.
  3. Stir in tomato paste, then add apple vinegar and stock along with bay leaves and herbs. Bring to a simmer.
  4. Return lamb shanks to the pot, cover, and choose your preferred cooking method: oven (325°F for 2-3 hours), stovetop (simmer for 2-3 hours), slow cooker (low for 6-8 hours), or pressure cooker (high for 45 minutes).
