  • 1 packet taco seasoning
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 cup sliced jalapeños (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper in a large bowl.
  3. Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet and roast for 25-30 minutes until golden and crispy.
