  • 1 cup dry green or brown lentils
  • 2 carrots, sliced
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 large potatoes, peeled and chopped
  • 1 cup milk
  • 4 tbsp butter

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, sliced carrots, and celery; cook until soft.
  2. Stir in minced garlic and cook until fragrant (about 1 minute).
  3. Add lentils, diced tomatoes, vegetable broth, thyme, and bay leaf. Stir to combine.
  4. Bring to boil; lower the heat and simmer for 25-30 minutes until lentils are tender.
  5. Meanwhile, boil peeled and chopped potatoes in salted water until tender.
  6. Drain potatoes and mash with butter, milk, salt, and pepper until creamy.
  7. Serve the lentil stew over mashed potatoes.
