  • 1 1/2 lemons
  • 1 bunch scallions
  • 1/3 cup plus 3 tablespoons olive oil
  • 10 ounces feta cheese
  • 4 ounces cream cheese (or heavy cream)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon hot water

Instructions

  1. Preheat your broiler and line a sheet pan with foil. Juice one lemon to yield about 3 tablespoons of juice; set aside.
  2. Cut the remaining half lemon into thin slices and toss it with scallions and 1 tablespoon of olive oil in a medium bowl.
  3. Spread the lemon slices and scallions onto the sheet pan in a single layer and broil for about 7 to 9 minutes, until charred.
  4. In a food processor, combine feta, cream cheese (or heavy cream), remaining olive oil, reserved lemon juice, black pepper, cayenne pepper, and hot water. Blend until smooth.
  5. Add most of the charred scallions to the mixture and pulse a few times for texture.
  6. Transfer the dip to a serving bowl and garnish with reserved scallions and charred lemon slices.
