  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (melted)
  • 1/4 teaspoon salt
  • 1/2 cup fresh lemon juice
  • Zest of one medium lemon
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon agar-agar powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, melted butter, and salt until crumbly; reserve half for topping.
  3. Grease a 9×13-inch baking dish and press the remaining oat mixture firmly into the bottom to form the crust.
  4. In another bowl, whisk together fresh lemon juice, lemon zest, granulated sugar, cornstarch, and agar-agar powder until smooth. Pour over the crust.
  5. Sprinkle the reserved oat crumble evenly on top.
  6. Bake for about 38 minutes until golden brown. Allow to cool completely before cutting into squares.
