  • 34 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup dry apple vinegar (or additional broth)
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to 'Sauté' mode and heat olive oil. Season the roast with salt and pepper, then sear until browned on all sides (about 4-5 minutes per side). Remove the roast.
  2. In the same pot, add onions and cook until caramelized (10-15 minutes). Stir in garlic and cook for another minute.
  3. Deglaze with apple vinegar or extra broth, scraping up any browned bits.
  4. Return the roast to the pot along with beef broth, thyme, and bay leaves. Secure the lid and set to 'Manual' or 'Pressure Cook' on high for 60 minutes.
  5. Let the pressure release naturally for about 15 minutes before carefully releasing any remaining pressure.
  6. Remove bay leaves and shred the roast with two forks before serving.
