  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced (plus extra for naan)
  • 1 inch piece fresh ginger, grated
  • 2 tbsp tomato paste
  • 14 oz crushed tomatoes
  • 2 cups beef broth
  • 1 cup coconut milk (or whole milk)
  • 1 tbsp curry powder
  • 1 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp coriander powder
  • 1 tsp turmeric
  • 1 tsp chili powder (optional)
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • 2 cups all-purpose flour
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tsp active dry yeast

Instructions

  1. Prepare all ingredients by cutting beef into cubes and chopping vegetables.
  2. In a large pot, heat oil over medium heat. Sauté chopped onion until softened, then add garlic and ginger.
  3. Add beef cubes to the pot; season with salt and pepper. Brown on all sides.
  4. Stir in tomato paste, crushed tomatoes, and beef broth along with spices. Mix well.
  5. Bring to a boil, reduce heat, cover, and simmer for about 1.5 hours until beef is tender.
  6. For naan: Mix flour, sugar, salt, and yeast in a bowl; gradually add warm water to form dough.
  7. Knead dough until smooth; let it rise for an hour.
  8. Roll dough into circles; cook each naan in a skillet over medium-high heat until puffy on both sides.
  9. Serve hot curry over basmati rice with warm garlic naan and garnish with cilantro.
