  • 2 large chicken breasts, cubed
  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Salt to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the rigatoni according to package instructions in salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Season cubed chicken with salt and pepper. In a skillet over medium-high heat, heat olive oil and cook the chicken for 5-7 minutes until golden brown. Remove from skillet.
  3. In the same skillet, sauté sliced carrots for about 3-4 minutes until slightly softened. Add minced garlic and cook for an additional minute.
  4. Lower the heat, add butter, then mix in honey, soy sauce, and black pepper. Simmer for 2-3 minutes until thickened.
  5. Return chicken to skillet; toss to coat in sauce before adding cooked rigatoni. Mix well and adjust sauce consistency with reserved pasta water as needed.
  6. Serve warm topped with chopped green onions.
