  • 1 tbsp soy sauce

  • 1 tsp paprika
  • Salt and pepper
  • 1 cup butternut squash, cubed
  • 1 tbsp olive oil
  • Pinch of cinnamon (optional)
  • 1 cup cooked white rice
  • 1 cup steamed broccoli florets
  • Fresh parsley (for garnish)
  • Lemon wedges

Instructions

  1. Preheat the oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, pepper, and optional cinnamon on a baking sheet. Roast for 25-30 minutes until tender.
  2. In a skillet over medium heat, heat olive oil and add cubed chicken. Cook until golden brown. Stir in minced garlic, honey, soy sauce, paprika, salt, and pepper; simmer until glazed.
  3. Steam broccoli florets for 3-4 minutes until bright green.
