Ingredients

  • Carrots, peeled and cut into sticks or rounds
  • Olive oil, for drizzling
  • Balsamic vinegar, for glazing
  • Honey, to add sweetness
  • Chopped pistachios, for garnish
  • Sesame seeds, for added texture
  • Fresh pomegranate arils, to sprinkle on top

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil and drizzle lightly with olive oil.
  2. In a mixing bowl, toss the carrots with olive oil, balsamic vinegar, honey, half of the pistachios, and sesame seeds until evenly coated. Spread them on the prepared baking sheet.
  3. Roast for 15 minutes, then toss gently. Continue roasting for another 8-12 minutes until fork-tender and glazed. Keep an eye on them to prevent burning during the last 5 minutes.
  4. Transfer the carrots to a serving dish and drizzle with additional balsamic vinegar. Top with remaining pistachios and fresh pomegranate arils before serving warm or at room temperature.
