3 pounds roma or plum tomatoes
8 cloves garlic
3 tablespoons olive oil
½ tablespoon olive oil (for caramelizing onions)
2 yellow onions
½ cup packed basil leaves
½ teaspoon dried oregano
1–2 cups water or vegetarian broth
Freshly ground salt and pepper
Instructions
Preheat your oven to 400°F. Line a large baking sheet with parchment paper.
Place halved tomatoes and garlic on the baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 40-45 minutes until caramelized.
In a large pot, heat olive oil over medium heat. Add sliced onions and caramelize until golden brown, about 20 minutes.
Cool the roasted tomatoes and garlic for 10 minutes, then blend them with basil leaves and caramelized onions until smooth.
Return the mixture to the pot, add oregano and broth/water, seasoning to taste. Simmer for about 10 minutes before serving.
