  • 4 chicken drumsticks
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 4 medium potatoes, peeled & cubed
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine chicken drumsticks with olive oil, paprika, oregano, garlic powder, salt, and pepper. Toss until well coated.
  3. In another bowl, mix cubed potatoes, sliced carrots, bell pepper with olive oil, paprika, salt, and pepper. Toss to coat evenly.
  4. Spread vegetables in a baking dish and place the seasoned chicken on top.
  5. Roast for 50-55 minutes until chicken is golden brown and cooked through (internal temperature should reach 75°C/165°F) while vegetables are tender.
  6. Garnish with chopped parsley before serving.
