  • 175 g Baking spread (or butter) (softened, unsalted)
  • 175 g Caster sugar
  • 3 Eggs (large)
  • 2 tsp Vanilla extract
  • 175 g Self raising flour
  • 25 g Black food coloring
  • 200 g Butter (softened, unsalted)
  • 400 g Icing sugar
  • 1 tsp Vanilla extract
  • 12 tbsp Milk
  • Green food coloring
  • Yellow food coloring
  • 150 g Tinned custard
  • Green food coloring
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat the oven to 140C Fan/325F/Gas Mark 3 and line a cupcake tin with black cupcake cases.
  2. In a mixing bowl, cream together softened baking spread and caster sugar using an electric mixer until fluffy.
  3. Add eggs and vanilla extract, mixing until fully incorporated. Fold in self-raising flour and black food coloring until blended.
  4. Fill the cupcake cases evenly and bake for 25-30 minutes until a skewer comes out clean. Cool completely on a rack.
  5. Core the cooled cupcakes and fill them with colored tinned custard.
  6. For the buttercream, beat softened butter and icing sugar until smooth, then mix in milk and food coloring to achieve desired green shade.
  7. Frost the cupcakes using a piping bag or spoon, finishing with candy eyes and sprinkles.
