  • 1 chicken breast
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 cup cooked rice (brown or white)
  • 1 cup corn kernels
  • 1 cup green beans, chopped
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • Salt & pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Toss broccoli and cauliflower in olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes, turning halfway.
  2. While veggies roast, season the chicken with olive oil, garlic powder, paprika, salt, and pepper. Grill or pan-sear over medium-high heat for about 5–6 minutes per side until golden brown and cooked through.
  3. In another pan, sauté corn and green beans in olive oil or soy sauce until tender. Add cooked rice and mix until heated through.
  4. Serve by arranging grilled chicken alongside veggie rice and roasted vegetables.
