  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes
  • 23 lettuce leaves
  • red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1 tbsp fresh herbs (parsley, dill, or cilantro), chopped
  • 1 tsp lemon juice
  • Pinch of chili flakes (optional)
  • 1 tsp olive oil
  • Salt & pepper, to taste

Instructions

  1. Season the chicken breast with salt, pepper, and olive oil; grill or pan-sear for 5-6 minutes per side until cooked through. Slice into strips.
  2. Prepare rice according to package instructions; let cool slightly.
  3. In a mixing bowl, combine Greek yogurt, chopped herbs, lemon juice, salt, pepper, and optional chili flakes; mix until smooth.
  4. Slice cucumber into rounds and halve cherry tomatoes; thinly slice red onion and tear lettuce leaves into bite-sized pieces.
  5. Assemble the bowl by layering rice as the base, topped with grilled chicken slices and vegetables. Finish with a dollop of herb yogurt sauce.
