  • 2 boneless, skinless chicken breasts
  • 300g Brussels sprouts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Juice of lemon
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • Salt & black pepper to taste

Instructions

  1. Marinate chicken in olive oil, garlic powder, onion powder, lemon juice, salt, and pepper for 15 minutes.
  2. Preheat grill or grill pan over medium-high heat and grill chicken for 5-6 minutes per side until fully cooked.
  3. Toss halved Brussels sprouts with olive oil, salt, and pepper on a baking sheet; roast at 200C (390F) for about 20 minutes until crispy.
  4. For the sauce, melt butter in a saucepan, add flour to make a roux, gradually whisk in milk until smooth. Stir in minced garlic and simmer until thickened; add grated Parmesan and season.
  5. Slice grilled chicken and serve over roasted Brussels sprouts; drizzle with creamy sauce.
