  • 1 salmon fillet (150-180g)
  • 1 tsp olive oil
  • 1 garlic clove, smashed
  • 1/2 tsp paprika
  • 1/2 tsp dried herbs (thyme, dill, or Italian blend)
  • Salt & black pepper to taste
  • 1 medium potato, peeled and diced
  • 1 tbsp olive oil or butter
  • 1 cup baby carrots
  • 1 tsp olive oil or butter
  • 1/2 tsp honey or maple syrup
  • 1 cup broccoli florets
  • Salt & pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub the salmon fillet with olive oil, smashed garlic, paprika, dried herbs, salt, and black pepper. Place on a parchment-lined baking sheet.
  3. Boil diced potatoes in salted water for 5-6 minutes until tender; drain. In a skillet over medium heat, pan-fry the potatoes in olive oil until crispy.
  4. Sauté baby carrots in a skillet with olive oil and a splash of water until tender. Add honey (or maple syrup) and season.
  5. Steam or sauté broccoli until bright green and tender-crisp.
  6. Arrange salmon, potatoes, carrots, and broccoli on a plate and serve hot.
