  • 1 red bell pepper, thinly sliced
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and pepper, to taste
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (or substitute with a vegetarian alternative)
  • Fresh parsley for garnish

Instructions

  1. Spiralize the zucchini into noodles and slice the chicken, garlic, onion, and red bell pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add minced garlic and onion; sauté for about 2-3 minutes until fragrant.
  3. Incorporate the chicken slices into the skillet; season with salt, pepper, and crushed red pepper flakes. Cook until golden brown and cooked through (5-7 minutes).
  4. Add the sliced red bell pepper and sauté for an additional 2 minutes.
  5. Reduce heat to medium; mix in the zucchini noodles along with soy sauce and oyster sauce. Stir well and cook until zucchini is tender but still firm (3-4 minutes).
  6. Garnish with chopped parsley before serving.
