  • 500g chicken breast, cubed
  • 200g mushrooms, sliced
  • 1 red bell pepper, sliced
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 300g fresh asparagus
  • 200g jasmine rice
  • 400ml water
  • Pinch of salt
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a pot, combine jasmine rice, water, and a pinch of salt. Bring to a boil, then reduce heat to low and simmer for about 15 minutes until tender.
  2. In a separate pan, heat olive oil over medium heat. Add fresh asparagus seasoned with salt and pepper. Roast for 8-10 minutes until tender-crisp.
  3. Heat sesame oil in a wok over high heat. Sauté minced garlic until fragrant. Add cubed chicken and cook until golden brown. Toss in sliced mushrooms and bell pepper; cook for another few minutes.
  4. Stir in soy sauce, hoisin sauce, and cornstarch slurry. Cook until the sauce thickens for about 2-3 minutes.
  5. Plate your stir-fry alongside fluffy rice and roasted asparagus. Garnish with chopped green onions before serving hot.
