  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp garlic powder
  • Salt & pepper
  • Fresh parsley, chopped (for garnish)
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 3 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • cup milk
  • Salt & pepper

Instructions

  1. For the mashed potatoes: Boil cubed potatoes in salted water until tender. Drain and mash with butter, milk, salt, and pepper until smooth.
  2. For the chicken: Heat olive oil and butter in a skillet over medium heat. Season chicken with garlic powder, salt, and pepper, then cook until golden brown and fully cooked through. Remove from skillet.
  3. For the vegetables: In the same skillet, sauté onion until translucent. Add mushrooms and bell peppers; cook until softened. Stir in minced garlic and season with salt and pepper.
  4. To serve: Plate the mashed potatoes as a base, top with chicken, surround with sautéed vegetables, and garnish with fresh parsley.
